Red Dabinett was made by co-fermenting a strong red IPA style wort with the juice from the traditional bittersweet cider apple Dabinett. Dabinett produces a strong, juicy, orangey red cider with mighty tannins that border on bitter, so we thought it would be a great pairing for a strong, juicy, bitter wort made with munich malts and resinous New World hops. The resulting blend was bottle conditioned for 6 months and is powerful, rich and heady but cut with a decisive bitter finish of apple tannin, hop resin and oak. 7.6%
