LA SAISON DES POIRES SEASON 2020
A collaboration with After the Harvest Brewing and Alex & Gabe Cook.
A wort of 80% pils and 20% wheat grist with aged Bramling X and Goldings Hops fermented by Belle Saison yeast.
Co-fermented at the end of October 2020 witha spontaneously fermented perry of Blakeney Red 30%, Gin 30%, Red Longdon 30%
and Butt 10% pears.
Bottled in March 2021 with the addition of 10 grams/litre sugar.
Then conditioned and matured in bottle.
This fully fermented saison was made last winter, to be drunk in the summer to slake the thirst of harvest workers.
